This is a popular street food of West Bengal and a traditional Bengali Fish Cutlet or Maacher Chop which is bursting with flavours. The filling is made with protein rich Rohu Fish belonging to Carp family alongwith nutritious carrot, green peas.and raisins.Other fish like Bhetki,Basa,Tuna,Salmon etc which has less bones may be used too.The outer crust is crispy made with boiled and mashed potatoes,spices,and dipped in a gramflour,cornflour slurry or whisked egg and coated with breadcrumbs and deep fried.Serve as a starter or appetizer or as a teatime snack alongwith a simple onion salad and lemon wedges.
Ingredients and spices that need to be Prepare to make Fish Cutlet or Maacher Chop:
- For filling :
- 500 gms rohu fish boiled and deboned
- 1 carrot boiled
- 1/4 cup green peas boiled
- 1 tbsp raisins
- 2 onions finely chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 2 fresh bread crumbs
- 3 green chillies chopped finely
- 1 tbsp coriander chopped
- 1/2 tsp turmeric
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala
- 3 tbsp mustard oil
- 1 tsp ghee
- 2 bay leaves
- 3 tbsp fresh tomato puree
- To taste salt and sugar
- For outer crust:
- 7-8 potatoes boiled
- 2 fresh bread crumbs
- 2 cups dry bread crumbs
- 2 onions chopped finely
- 1 tsp ginger paste or grated
- 3 green chillies chopped finely
- To taste salt
- 1/2 tsp sugar
- 1/2 tsp garam masala
- 1 tbsp coriander chopped finely
- 1/2 tsp red chilli powder
- As needed oil for deep frying
- For slurry :
- 4-5 tbsp gramflour or 1 whisked egg
- 2 tbsp cornflour
Steps to make Fish Cutlet or Maacher Chop
- For filling : Boil fish in 1/2 cup water with 1/4 th tsp salt and turmeric. Dry up water and cool.Debone fish and shred it.Add breadcrumbs. Parboil carrot and green peas and mash with a potato masher.Mix and combine well with the fish.Here rohu fish is used, but other fish like Katla, Bhetki,Salmon,Tuna,Basa may be used.
- Heat oil in a wok and fry chopped onion till translucent.Add ginger and garlic paste.Toss and add the mashed fish mix and add tomato puree,turmeric and red chilli powder.Add salt and sugar to taste.Add garam masala,boiled peas and raisins.Fry till dry.Sprinkle chopped coriander and 1 tsp ghee and mix well.Set aside to cool.
- Pressure cook potatoes upto 2 whistles.Release pressure after 5 minutes.The potatoes should not be mushy.Drain water and mash with a masher while still hot.Add breadcrumbs and mix well.Heat oil in a wok and fry chopped onion till light brown. Add chopped green chillies,ginger paste and fry.
- Add the potato mix,salt and pinch of sugar to taste.Add garam masala,chopped coriander and fry till it starts getting brown underneath. Toss again and fry. This step enhances the flavour of the crust. Crust coating for fish is ready.Divide fish mixture into lemon sized balls.Divide outer potato crust into balls slightly bigger than fish balls.Shape into cups and add the filling.Close the ball and shape into oblong or round cutlets. Dip in the gramflour cornflour slurry and toss in breadcrumbs.
- Refrigerate for an hour before frying. Heat oil in a pan and deep fry fish cutlets till crispy and golden brown.Serve hot delicious fish cutlets as a starter or an appetizer at parties or as a teatime snack alongwith with a simple onion salad and lemon wedges.
