  2. 1/2 cup thinly chopped potatoes
  3. 3 tablespoon chopped onions
  4. 2 tablespoon oil
  5. To taste Salt
  6. 4-6 green chillies
  7. 1/2 teaspoon termeric powder
  8. 1 Egg of Hilsa fish

Instructions to make Bitter Melon with Hilsa fish egg fry/ Bengali- Korola Bhaji

  1. At first, we have to reduce the bitter taste of Kerala. For this, clean the Bitter Melon then slice it thinly. Now wash it and put it in a bowl with full of water. Add some salt into it and put it aside for 1 hour.
  2. Salty water will reduce the bitterness of the melon. After that wash the bitter melon again with clean water and drain the water from it. Keep it aside. Chop the potatoes thinly, wash it and keep it aside.
  3. Now, take one medium size Hilsa fish egg and wash it very carefully in the clean water and put it into a bowl after drain the water from it.
  4. Now break the thin layers of egg by rubbing your hand and mix the whole egg. Make it a liquid mixture and keep the egg aside.
  5. Now, take a frypan, put some oil and heat it on stove. Put chopped onions and green chillies with salt as required into it and fry 1 minutes. Add turmeric powder into it.
  6. Now add the liquid mixture of Hilsa fish egg into it and move your spoon very first so that the egg can finely mixed with onions. Fry it 2 minutes in a medium low flame.
  7. Now add the sliced Bitter Melon with chopped potatoes into it and stir fry all for 10 minutes in a high flame and give them a perfect mix.
  8. When the bitter melon and potatoes are perfectly cooked, stop the flame immediately.
