  1. 1 kg rohu fish
  2. as required Mustard oil for deep frying
  3. For fish marination
  4. as per your taste Salt
  5. 1/2 tsp turmeric powder
  6. 1/2 tsp red chili powder
  7. 1 tbsp mustard oil
  8. For besara (mustard paste)
  9. 1.5 tsp mustard
  10. 1 tsp cumin seeds
  11. 5-6 cloves garlic
  12. 1-2 fresh green chillies
  13. 1/2 inch ginger
  14. For gravy
  15. 1/4 tsp mustard seeds
  16. 1/2 tsp cumin seeds
  17. 1 sliced onion
  18. 1 sliced big tomato
  19. 2 Slit fresh green chilli
  20. leaves as required Finely chopped coriander
  21. to taste Salt
  22. 1/2 tsp turmeric powder
  23. 1/2 tsp red chili powder
  24. 1/2 tsp coriander powder
  25. 1/2 tsp fish masala or curry powder
  26. 1-2 dry mango (ambula) soak it in little water
  27. 2 tbsp mustard oil
  28. as required Water for adjusting consistency

Steps to make Macha besara (fish cooked in mustard paste)

  1. First marinate the fish with the above-mentioned ingredients. Coat each fish nicely. Cover and refrigerate for at least 30 minutes.
    Soak the mentioned ingredients of mustard paste for at least 20 minutes.
  2. Then heat oil for frying the fish. Fry all fish in medium hot oil, till golden brown colour. Drain extra oil and keep aside.
  3. Next grind the soaked ingredients with water and keep ready a smooth besara masala.
    Next place a kadhai, heat oil. Splutter mustard seeds, cumin seeds. Add fresh green chillies, onion and saute. Next after sometime add tomatoes, mix and cook tomatoes till they become mushy.
  4. Next add the besara paste and continue cooking in slow flame. Add salt, turmeric powder, chili powder, coriander powder and fish masala. Next add little water and mix. Cook till masala leaves oil. Then add water as much, so as to make a thin gravy. Let it come to boil.
  5. As the jhol(gravy) gets cooked and boils up..add the fried fishes into it. Give a gentle mix. Let it be on flame for a minute or two so that fish would absorb the flavours of the jhol. Add garam masala and ambula (along with its soaked water) mix gently. Garnish with chopped coriander leaves.
  6. Nice flavoured spicy and tangy macha besara is ready... serve hot with steaming rice...
