  4. Add the beef or chicken and let it cook. Add any firm vegetables you like (carrot, watercress, baby corn, onion etc)
  5. Put boiling water and rice in a microwave safe container and put it on for 6 minutes (using an 800W microwave - adjust accordingly.)
  6. After the rice has finished; take it out of the microwave, give it a stir and add a little more water if it's looking dry. Put it back in the microwave for however long you put it in the first time.
  7. While the rice finishes cooking, add the; leafy greens, sugar, fish sauce and lemon juice. If you're using prawns, put them in now too.
  8. Strain the rice when done and in a strainer, run it under hot water for a few seconds to wash the excess starch away.
  9. Serve the curry over the rice
