  6. 2 tbsp whisked curd
  7. 1.5 tsp turmeric powder
  8. 1.5 tsp Kashmiri red chilli powder
  9. 1 tsp red chilli powder
  10. 1 tsp cumin powder
  11. 1 tsp coriander powder
  12. 1/2 tsp garam masala powder
  13. 2 bay leaves
  14. 1/2 tsp cumin seeds
  15. 2 dry red chillies
  16. 3 cloves
  17. 2 cardamoms
  18. 1 inch cinnamon stick
  19. 9-10 raisins
  20. 1/2 tsp sugar
  21. to taste Salt
  22. As needed Hot water
  23. as required Oil

Instructions to make Rui Mach er Kaalia (Rohu Fish Kaalia)

  1. Smear the cleaned fish pieces with 1/2 tsp turmeric powder & salt. Heat oil in a kadhai, once it is smoking hot, fry the fish pieces into batches, fry it until they are crisp & slight reddish in colour.
  2. Thinly slice half onion and fry it for 3-4 mins & keep it aside. Make a paste of remaining onion with ginger and keep it aside.
  3. In the same pan, add some more oil, once its hot, add dry red chillies, followed by cumin seeds, cloves, cardamoms & cinnamon and fry it for 1 min. Next add the onion ginger paste, sugar and cook it well for about 4-5 mins.
  4. Next lower the flame, add turmeric powder & kashimiri red chili powder, cook it for 2-3 mins, add the chopped tomatoes, salt to taste & cook it well, until the tomatoes becomes soft and mushy.
  5. Next add the cumin powder, coriander powder, red chilli powder and cook the masala well by adding little hot water at a time until oil starts to separate from sides of the pan.
  6. Next add the whisked curd and contiously stir it for 2-3 mins, next add hot water as per the desired consistency of the gravy.
  7. Once the gravy starts to boil, add the fried fish pieces, raisins & slitted green chilies, mix it well. Cover and allow it cook for 4-5 mins or until the gravy reaches your desired consistency.
  8. Lastly add some garam masala powder, fried onions and further cook it for 2 minutes and it's done. Serve it hot with some steamed rice and enjoy.
