- 2 medium onions
- 5-6 Green Chillies
- 2 tbsp Fresh Coriander Leaves

- 1 tsp Coriander Powder
- 2 tsp Red Chilli Powder
- 1.5 tsp Turmeric Powder
- 8-10 Garlic Cloves
- 1/2 inch piece Ginger
- 1/4 tsp Fenugreek Seeds / Methi Dana
- 1 tbsp Yellow Mustard Seeds
- 3/4 tsp Cumin Seeds
- 1.5 tsp Coriander Seeds
- 6-8 Peppercorns
- 3-4 Cloves
- 3 Green Cardamoms
- 2 Bay Leaves
- 1.5 Cups Mustard Oil
- 1 tbsp Mango Pickle Oil / Masala
- Salt to taste
Instructions to make Bihari Fish Curry
- Wash the Fish and cut into fillets.
- Drain & rub with 1 tsp each of turmeric, cumin, coriander & red chilli powders. Grind 4 -5 garlic cloves, 3 green chillies and the ginger, add to the fish. Add salt to taste & 1 tbsp mustard oil. Leave to marinate for 15-20 mins.
- Now shallow fry or deep fry the fish pieces in hot mustard oil in batches, until golden brown.
- Set aside the fried fish.
- Grind together, the roughly chopped onions, 2 tomatoes, 2-3 green chillies, the remaining garlic, cardamoms, cloves, peppercorns & the mustard, cumin & coriander seeds into a smooth paste. Set aside
- Heat 2 tbsp of the same oil used to fry the fish, add the bay leaves & allow to crackle and change colour.
- Add the turmeric & 1 tsp red chilli powders, add the ground masala paste and saute.
- Saute until the masala leaves the sides of the pan.
- Add the mango pickle masala, saute for a minute or two
- Add salt to taste & some coriander leaves.
- Add 2-3 cups or water or as required for the curry, add the fried fish pieces & bring to a boil.
- Add a sliced tomato & cover & simmer for 5 mins. Garnish with fresh coriander.
- Serve hot with rice & fried fish on the side.
