  1. Grind Leeks, Onion, Celery, Garlic, Parsley, Coriander and Pepper in a food processor.
  2. Heat Olive Oil in a large Dutch Oven over medium-high heat. Add the mixture from the food processor to pot and sauté till almost all moisture has evaporated.
  3. Deglaze the pot with the Wine. Add Tomatoes, Carrots, Potatoes, Cayenne Pepper, Cloves, Bay leave, Paprika, Saffron, Salt and Stock. Bring to a boil, reduce heat and simmer covered for 45 minutes.
  4. Add Sherry, Fish and Pepper. Cover the pot, cook for 3 minutes and turn off the heat. Adjust seasoning with Salt, Pepper and/or Lemon juice to taste. Replace the lid and allow to steam for 10 minutes. Serve garnished with chopped Chives.
