  4. 4 cloved garlic, chopped
  5. 1/2 thumb size ginger, sliced
  6. 1-2 M-L tomatoes, sliced thinly
  7. 3-4 c water
  8. 1-2 T patis or fish sauce (use salt if none)
  9. 2-3 T Tamarind soup powder base (or paste, to taste)
  10. 1/2 Chicken broth cube
  11. salt & pepper
  12. Cooking oil

  1. In a pot heat oil and sauté garlic, onions, ginger.
  2. Add cut up slightly salted chicken. Cover and let the juices come out. Turn pieces on the other side once it has.
  3. Add tomatoes. Add 1/2 cup water. Season with pepper. Drop in broth cube. Add fish sauce. Add kangkong stalks, beans, other harder veggies. Cover and simmer a few minutes.
  4. Add the rest of water. Mix in Tamarind broth powder or paste (In photos- either works well). I like mine not overly sour for Sinampalukan (but super sour for pork Sinigang) so it's up to you how much, add to taste. Adjust if more fish sauce /salt is needed also.
  5. Drop in the soft/leafy veggies. Bring to a quick simmer. Turn off heat and serve hot with rice.
