I just had to recreate this old school Beans and Ruxe recipe we had while growing up.
This recipe is easy to make and so delicious. Though back then, it wasnt really a hit for me, but recreating it today brought back so many memories and the taste was much better than I remembered.
So here's my Mom's #oldschool Beans and Rice jollof.

Ingredients and spices that need to be Get to make Beans And Rice Jollof:
- 1 1/2 Cup Beans
- 3 Cup Rice
- 1 medium size smoked Mackerel Fish
- 1/2 kilo well seasoned and cooked brisket bone
- 1/2 cup Crayfish grinded
- 3 tablespoon fresh tomatoes and pepper mix
- 1 big onion
- 2 cooking spoon palm oil
- 2 seasoning cubes
- Salt to tadte
- 2 tablespoon sliced scent leaves
Instructions to make Beans And Rice Jollof
- Wash the Beans, parboli fir about 5 -10mins, strain out and rinse the beans,
Also parbiled the Rice, for 3mins, wash and strain and set aside - Place pot on fire, once hot, heat up palm oil, add the sliced onions, stir add the fresh pepper mix, stir properly, saute gently, add water into the pot, add salt, seasoning cube...allow to boil..
Once it starts boiling, pour in the beans and allow to cook for about 20mins, - Add the Rice to cook...ensure, theres enough water that will cook the beans and Rice...otherwise, add water, and allow to cook.. before the Rice get complete tender, you add the cook brisket bones smoked fish, crayfish and remaining seasoning cube. And allow to cook till the water is almost dried..
Sprinkled some sliced onions over the rice and finally add in the sliced scent leaves..cover with a foil, and leaves to simmer for about 3 mins.
Give the pot a good stir and remove from heat. - Your #oldschool Beans and Rice is ready to enjoy.
